Low Carb Meal Idea: Cod Salad

Peace, family! I eat fish a LOT. It’s a great source of protein and healthy fats which are the main components of a ketogenic diet.

My partner took care of his own dinner tonight, so I simply seared (two minutes on each side) a half-pound cod filet before baking it at 350 degrees for 20 minutes. I baked my fish in a cast iron skillet with lemon juice, fresh dill, and roasted garlic. Once it was done, I enjoyed it over a bed of mixed leafy greens. The kind from the bag. You know what I’m talking about. Nothing fancy was done here people, so stop acting like going on a low-carb diet is the most difficult thing in the world! I’m joking, we’re all on our own journeys. I just want more people to see how easy it can be and embrace it is all.
