Low-Carb Cheesy Cauliflower Garlic Breadsticks

Peace, family! The holiday season is in full swing which means there’s absolutely no shortage of delicious, but extremely carby foods at our fingertips. While it’s nice to indulge, we can counteract the effects on our waistlines by still incorporating healthier and lower carb options in daily meals and routines.

Let me tell you about these cauliflower breadsticks though. Amazing and guilt-free! I took about a pound of riced cauliflower and microwaved it in a glass bowl for 4 ½ minutes. Immediately after removing it from the microwave I added a cup of mozzarella cheese, salt, basil, oregano, pepper, one minced garlic clove, and two tablespoons of butter and stirred until evenly distributed. After the mixture had a few minutes to cool, I added one large egg and stirred again. Then, on a parchment paper-lined baking tray, I took the mixture and formed it into one large square loaf by hand before baking it at 400 degrees for 15 minutes.

After 15 minutes, I removed the loaf from the oven and covered the entire thing with a mixture of melted butter, cheddar cheese, minced garlic, Parmesan cheese, thyme, and oregano. I then returned it to the oven for another ten minutes or until the cheese was melted and the crust was golden brown and crispy. I waited until the loaf was cool before cutting it into individual breadsticks.

They. Were. SO. Good. Just pair with your favorite dipping sauce (I loathe marinara as a dipping sauce!) and enjoy. I’m letting you know now that they didn’t even last a half hour around here!
