Low-Carb Meal Idea: Meatball Kabobs

Peace! The year is coming to an end and many of us are unwinding, reflecting, and planning for 2017. For one of our final meals of the year, I decided to keep it light, simple, and fun. Kabobs are always a hit, and naturally low-carb, as they typically only include protein, veggies, and the occasional fruit.

For ours, I simply used leftover zucchini from yesterday’s zucchini boats, grilled turkey meatballs (no breadcrumb filling), and red bell peppers.

One thing I’d like to continue to stress as we enter a new year, is to keep your keto, low-carb, or weight-loss journey as simple and stress-free as possible.
