Easy Weeknight Meal: Stuffed Green Bell Peppers

This is a super-easy weeknight meal that does not require a lot of time, energy, or prep-work. You can fill with your favorite protein (chicken, turkey, beef, etc.) or it can serve as a high-vibrational vegan or vegetarian option. Some choose to boil their peppers before stuffing, but I opt for simply stuffing it with my ingredients of choice, then baking until the cheese is melted. I prefer my vegetables really crunchy, and prepared with as little heat as possible. Of course, if you add meat it will need to be cooked prior to stuffing. Enjoy.
