Stuffed Seafood Avocado

I tried to think of (and Google) a witty joke about avocados to begin this entry. Thirty minutes and two blank stares from my husband later, I have nothing. Maybe malware from a shady website, but…moving along. The almighty avocado boasts some pretty impressive health benefits, right? They’re packed with fiber, potassium, and healthy fats. They aid in digestive health and nutrient absorption, and support a well-functioning immune system. Aside from that, this was bomb. Also, I was just informed that people no longer say that. I’m just going to get into it:


2 Large Haas Avocado

8 oz. Chopped Crab, Lightly Sautéed

12 oz. Shrimp, Lightly Sautéed

1 Cup Chopped Cilantro (or to taste)

1 Cup Diced Tomato

Juice of 1 Lime

½ Medium White Onion, Chopped

Cracked Black Pepper to Taste


I allowed the shrimp and crab to sauté for about 10-12 minutes. During, this time, I sliced my two avocados, and scooped the contents into a medium mixing bowl. I then diced the avocado; I didn’t really want to mash it to the consistency of guacamole. This is just a personal texture preference. I wanted this to have more crunch. I added the remaining ingredients to my mixing bowl and tossed for about 1 minute. I then scooped the mixture back into the avocado skin for a beautiful and delicious finish. Easy. Make this. Make it now.
