Low-Carb Red Cabbage Wraps


Red Cabbage is slept on!

Although not typically included on any popular “best of” lists, this superfood boasts several healing properties; it’s anti-inflammatory, full of antioxidants, promotes skin health, and can even help reduce your risk for osteoporosis.

Tonight I kept it light and easy with these amazing four-ingredient red cabbage wraps. Ready?


Grilled Chicken Breast, Diced

1 Medium Yellow Bell Pepper, Diced

1 Medium Head Purple Cabbage

1 Cup Wild Onion, Chopped


Optional seasonings for chicken: Salt, pepper, paprika, garlic powder, onion powder


I grilled my seasoned chicken breast stovetop, then diced and set aside. I thoroughly cleaned my head of cabbage, then carefully removed the leaves one-by-one to avoid any tearing.

I’ve seen cabbage wraps prepared where the cabbage was cooked prior to wrapping, but I chose not to do so since I would be baking my wraps.

I stuffed each leaf with a handful of chicken, onion, and bell pepper, before rolling them up burrito style. These babies baked for about 15 minutes at 350.

I finished them off with cilantro avocado yogurt dressing from Bolthouse Farms with a little Himalayan Pink Salt and that was that! Let me know if you make these, and how you customize your wraps. Enjoy.
