Low-Carb Cauliflower "Tots"

Peace! At 61 calories each, these low-carb cauliflower “tots” are a guilt-free way to enjoy a timeless favorite. We may or may not have eaten them for breakfast. Whoops. Here are the nutrition deets:

3.5 Cups (410g) Organic Cauliflower (Riced)

1 Garlic Clove (34g) (Chopped)

¼ Cup White Onion (Chopped)

1 ½ Cups Shredded Cheddar Cheese

1 ½ Cups Shredded Parmesan Cheese

1 Tbsp. Melted Butter

1 Medium Egg


I first microwaved my riced cauliflower in a glass bowl for five minutes. After removing and allowing it to slightly cool, I added the remaining ingredients and stirred for 60 seconds, or until evenly mixed. I then used my hands to grab small portions of the mixture, form and shape into tots, and place them on a parchment paper-lined baking sheet. Finally, I baked at 400 degrees for about 20 minutes, or until golden and crispy on the outside.  

I served them with a homemade sour cream and onion dip. They were absolutely delicious, and husband-approved!
