Low-Carb Broccoli Cauliflower & Sausage Cheddar Soup

Peace! Broccoli cheddar soup is the super addicting comfort favorite that many of us grew up enjoying. My husband and I seriously could not get enough of this.


1 Medium Head of Cauliflower (Chopped and Florets)

1 lb. Broccoli (Chopped and Florets)

16 oz. Melted Cheddar (There are several brands that now offer low-carb cheese sauce)

14 oz. Turkey Smoke Sausage

3.5 Cups Water

2 Tbsp. Himalayan Pink Salt

2 Tbsp. Ground Black Pepper


I first washed and chopped the broccoli and cauliflower before placing in a large pot with 3 cups of water and allowed to cook on medium-high heat until the water started to boil. I then added the sausage and seasonings, reduced the heat, and covered with a lid before letting it steam for about 15-20 minutes, or until the vegetables became soft and almost mushy (yes, mushy) to the touch. I then added the cheese sauce, and another ½ cup of water, and stirred the combination for several minutes to evenly distribute all of the ingredients and ensure a smooth consistency. I allowed some of the broccoli and cauliflower to remain in small florets to give the dish some additional texture and heartiness. I then covered the pot again, and allowed my soup to cook for a final 10 minutes.

This made enough for both my husband and I to have for dinner for two days and lunch for one. There’s literally not one drop left.
