Low-Carb Cucumber Cilantro-Lime Summer Alfredo
Peace! This low-carb “pasta” dish is quick, easy, refreshing, and perfect for a hot summer day. If we’re being completely honest here, I didn’t even bother with measurements. I simply mixed:
Grilled boneless/skinless chicken thighs (diced)
Diced red bell pepper
Juice of one lime
1 Cup prepared Alfredo sauce (check carb content!)
About ½ cup chopped basil
About ½ cup chopped cilantro
Himalayan pink salt to taste
About 2 tbsp. crushed red pepper
A dash or two of ground black pepper
I heated these ingredients in my saucepan before pouring over a bed of crisp, crunchy, cool spiralized cucumber. You may choose to heat your “noodles” with the sauce.
It was delicious, extremely filling, and an awesome way to end a Texas summer evening.
