Low-Carb Chicken "Noodle" Soup

Peace! It’s been raining in our little corner of Texas for a couple of days now, and my hair has the frizz to prove it! Today it got really heavy, nasty, dark, and flood-y so I was craving a Homestyle comfort that would warm me up. This chicken “zoodle” soup rose to the occasion.

In the spirit of transparency, I should tell you that this was one of the laziest meals I’ve ever made. I simply emptied 32 ounces of organic low sodium chicken broth into a large pot and added diced celery, oregano, diced wild onions, and zucchini noodles (from three medium zucchini squash). I didn’t even cook the chicken. Whoops. I deboned a store-bought (pre-cooked) rotisserie chicken, added it to the pot, and allowed the whole thing to cook for about 15 minutes. That’s it. Now to find a quilt, a good movie, and a pint of ice cream to cuddle up with. Just kidding about the ice cream.
