Mini Keto Eggplant Pizza

Peace! We are pizza FIENDS around here! As my blog grows, you will probably see a million different keto and low-carb pizza recipes. Today we used sliced eggplant as the crust and it couldn’t have turned out better!

Each slice contained:

60g Sliced Eggplant

15g Traditional Pizza Sauce

4 Pepperoni Slices

11g Banana Peppers

12g Mozzarella Cheese


I simply sliced the eggplant, loaded the toppings, and baked at 400 degrees for 10-12 minutes. For extra crispiness you may choose to broil them for about 2 minutes after baking. That’s it!
