Chicken and Vegetable Kabobs

Peace! We’ll soon be trading swimming pools and cookouts for boots, scarves, and pumpkin spice everything. In preparation, we whipped up some amazing chicken and veggie kabobs indoors on our stove-top cast iron grill. No charcoal or lighter fluid required, lol.

I washed and sliced mushrooms, squash (yellow & green), bell pepper (red & green), red onions, jalapenos, and chicken thighs (raw, boneless & skinless).

After positioning all of the ingredients on my wet kabob sticks, I preheated the cast iron grill with extra virgin olive oil for about 3 minutes.  I then gently placed my kabobs on the grill and allowed then to cook for about 5 minutes per side, or until the vegetables were tender and the chicken was fully cooked.

Chicken and veggie kabobs are great because they make it easy to sneak in a low-carb meal to your family without them even thinking about it! Who is going to pass up a kabob?
