Zucchini Noodles & Meatballs
Peace, family! Hopefully you’re all powering through the week with balance, grace, and good energy. Tonight, I kept it super simple with meatballs (pre-made and previously frozen). I paired them with zucchini noodles that I spiced with mushroom, dill weed, smoked paprika, sea salt, and cumin. I sautéed the “zoodles” in extra virgin olive oil for five minutes while the meatballs baked in the oven (20 minutes, 350 degrees).
Following a low-carb lifestyle does not have to mean spending tons of money or spending all day in the kitchen. This is just one example of an effortless meal that will fill you up, and leave you free to tackle your evening duties. Don’t overthink it!
