Low-Carb Pigs-in-Blanket

Peace, family! I thoroughly enjoyed this long holiday weekend and hope you did the same. I really wanted to enjoy this last day before returning to the rat race, so a lazy, easy breakfast was in order. These low-carb pigs in a blanket were easy to make while still being able to lounge around the house. I used:

1 14oz Package Turkey Smokies

2 Cups Mozzarella Cheese

5 Tbsp. Almond Flour

1 Large Egg

1 Tbsp Butter

1 Garlic Clove (Minced)

I melted the cheese in a large glass bowl until smooth and moldable. I then stirred in the egg, flour, and garlic and mixed well. I removed small bits of the cheese & flour mixture and kneaded it between my hand while stretching it and forming it into strips. I then wrapped these strips around the turkey smokies one by one and placed on a greased baking sheet. Finally, I baked the wrapped smokies at 350 degrees for 20 minutes, or until they were a dark golden brown. I rubbed garlic and butter over the top for a perfect finish!

This was a quick and painless recipe that allowed me to get back to doing nothing as soon as possible, and not a minute later.
