Low-Carb Cabbage & Sausage Blend

Peace, family! Listen. Today was hard! It was the first day back to work after the long weekend, and my holiday behavior (lol) definitely caught up with me. I’ve been sleepy, cranky, and lagging all day! I wasn’t in the mood for some big fancy dinner that would take all evening to prepare.

Tonight, I kept it simple.  I simply browned a package of turkey Italian sausage with a little leftover chicken breast on a skillet. In a separate pot, I steamed diced zucchini and cabbage (washed and chopped) until tender. Finally, I added the chicken and sausage to the pot with the veggie mixture, stirred well, and allowed the flavors to cook together for about ten minutes. I didn’t want any added sodium so I seasoned my mixture with salt-free garlic powder, and crushed red pepper flakes.

Now time to queue up season two of Narcos for some Netflix & chill with the husband. ;-)
