Keto Broccoli Beef
Peace! We didn’t want to waste any time getting our new year started on the right foot, so we decided on keto broccoli beef for dinner! After the festivities of ringing in the New Year, I knew that I needed to make a low-maintenance meal that didn’t require a lot of energy, so I put my trusty crockpot to use.
I took a pound of thinly-sliced beef sirloin, covered with low-sodium soy sauce, and cooked it in the crockpot on high for 2 ½ hours. I then added sliced mushrooms, an ounce of dried chili pequinos, a couple drops of sesame oil, and a tablespoon of xanthan gum, stirred, and allowed it to cook for another fifteen minutes on high. Finally, I washed and separated three broccoli crowns, added them to the pot and cooked for a final 30 minutes on high.
This dish came out absolutely delicious and we did not miss the noodles or rice that typically come served with it at restaurants. Here’s to a year filled with prosperity and wellness!
