Low-Carb Seared Chicken & Cheesy Creamed Spinach
Peace, family! It's been a while since I've had the chance to cook and I've been itching to get back in the kitchen! I wanted to start our week off with a great meal that still allowed plenty of time for relaxation and self-care, meaning that I needed something quick and delicious.
On my stovetop, I heated two tablespoons of extra virgin olive oil in a large cast-iron skillet. I then seared three medium chicken breasts (seasoned with sea salt, pepper, and thyme) for three minutes on each side. I removed the chicken from the skillet and set them aside.
I then sautéed one half onion and four cups of fresh spinach in butter until the spinach was slightly wilted. After that, I added 8 ounces of cream cheese to the skillet, stirring until it was melted and the ingredients were even distributed. I seasoned this mixture with dill, turmeric, a pinch of sea salt, and a squeeze of fresh lemon juice.
Finally, I returned the chicken to the skillet with the cheese/spinach mixture and baked it all together for 25-30 minutes at 375 degrees before topping with lemon zest.
The flavors combined beautifully and we had a low-carb comfort meal in less than 45 minutes!
