Low-Carb Quesadillas

Peace, family. Craving quesadillas? I don’t blame you one bit! They’re simple, easy, versatile, and delicious. The only caveat is that the traditional flour tortilla shell is typically loaded with carbs, and not the good kind. To combat this, I decided to try Olé brand “Xtreme Wellness” spinach & herbs tortilla wraps. While they still contain flour and other additives (meaning that I will only eat them on rare occasions), they are only 50 calories and 5 net carbs per serving.

I filled my quesadilla with diced chicken breast, sautéed spinach, arugula, and cheese, but this is definitely a customizable dish that you can fill with your favorite source of protein and healthy fats. I cooked them in my quesadilla maker (although stovetop in a skillet works just as well) and served alongside sour cream and guacamole!
