Salmon with Charred Butternut Squash and Green Beans
Peace, family! I hope you all are pushing through this week with ease. It’s been a busy week for me, but this meal helped!
I simply seared salmon filets with lemon slices on a cast iron grill for 4 minutes on each side before baking at 375 for 20 minutes. In another skillet, I heated two tablespoons of extra virgin olive oil before charring diced butternut squash and green beans for five minutes, and then sautéing for another five minutes. I seasoned my veggies with lemon juice, coarse sea salt, cracked black pepper, and cumin.
I say this often and always: do NOT complicate your wellness routine. That’s a recipe for disaster. Making clean, low-carb, or ketogenic meals can be just as fast and easy as their carby counterparts. All it takes is a little time and planning.
