Ramen-Inspired Low-Carb Bowl

Peace! This ramen-inspired bowl was super quick and easy, making it the perfect Saturday afternoon lunch! I say ramen-inspired because it’s not exactly authentic, but I wanted to capture the spirit and flavor of a dish that many of us love, I’m not keen on soft-boiled eggs, so that’s one major variation. I also used cooked spaghetti squash that we had left over in the place of traditional noodles.


Grilled Chicken Breast

Diced Green Onion

Sliced Mushroom

Cooked and Shredded Spaghetti Squash

Chicken Broth (Seasoned with crushed red pepper, soy sauce, ginger)

Fresh Ginger (peeled and chopped)

Boiled Egg

Crushed Red Pepper

Wasabi Flavored Seaweed

Sesame Seed


The quantities of each ingredient that you use will depend on your tolerance for their respective flavors. Ginger can be particularly overwhelming if your palate is not used to its flavor.  I combined my ingredients to create a tasty pick-me-up that aligns perfectly with my low-carb lifestyle.
