Quick Bite: Spinach, Mushroom, Yellow Squash, and Avocado Salad

Peace, family! Yesterday I made several commitments throughout the day, meaning I was super busy. Before I knew it, half the day was gone and I was hangry (yes, hangry). It happens to us all. I knew that whatever I ate needed to be done ASAP in order for me to make it to my next event, but I did not want to fall off my plan and into the fast food trap. Instead I made this quick salad which turned out delicious and was ready in under 15 minutes. I seasoned my mushroom and diced yellow squash with sea salt, black pepper, garlic, and rosemary (I know, I use rosemary in EVERY dish. It's truly a favorite). I then grilled them to my desired tenderness, before plating with diced avocado and fresh spinach leaves. EASY. I opted to skip the dressing because this salad stood so solidly on its own!
