Seafood Salad Sliders on Low-Carb Buns
Peace, family! If you're looking to make a delicious brunch to close out the weekend then you're in the right place. These seafood salad sliders on low-carb buns can be made in no time, and they pack a tasty punch! For the buns, I used the fathead recipe that I found on Low Carb Maven.
Ingredients (slightly modified from original):
1 1/2 cup mozzarella cheese
2 oz cream cheese
1 large egg
1 1/2 cup almond flour
1 tsp baking soda (or 1 tbsp baking powder)
1/2 cup water
Trader Joe's Everything but the Bagel seasoning
Preheat oven to 400 degrees.
First, microwave the cheese (mozzarella and cream cheese) for about one minute before removing and stirring. Return the cheese to the microwave for an additional 30 seconds, or until a smooth, creamy mixture forms. Next, add the cheese mixture to your food processor, along with the egg, and process until the egg has smoothly integrated with the mixture. Then, add the flour and baking soda and continue to process, adding the water as needed, until you have a smooth and even dough. Next, roll the dough into five even balls and place on your baking sheet before gently flattening them with the palm of your hand. You may opt to to roll the dough into more or less buns, depending on how large you wish for them to be. The last step is to allow them to bake for about 11 to 15 minutes or until golden brown. Allow the rolls to cool before slicing.
Now, you can serve these rolls however you like. I recommend getting creative. I chose to top my buns With Everything but the Bagel Seasoning, prior to baking. I then whipped up a quick seafood salad. The salad consisted of
12 oz lump crab meat
1 lb shrimp - peeled, cooked, and cooled
5 tbsp organic mayonnaise
1/2 cup chopped celery
Fresh fennel to taste
Trader Joe's 21 Seasoning Salute to taste
1 tsp sea salt
This meal turned out so great even my husband, a bona fide hater of mayonnaise, was begging for more. Try it out and let me know what you think!
