Salmon Wrapped Asparagus

If you’re looking for a simple keto friendly lunch or snack to get you through the afternoon, I’ve got you covered! These asparagus and smoked salmon rolls are easy to make and very satisfying. I used a precooked pack of smoked salmon, but if you have a lot of time and you’re feeling super ambitious, you may opt to smoke the salmon yourself. Just be sure to invite me over if you do!

Ingredients:

8 oz. Smoked Salmon

10 Asparagus Spears (approx.)

4 oz. Cream Cheese, softened

4 Green Onion Stalks, chopped

Salt, to taste

Pepper, to taste

2 tsp. Extra Virgin Olive Oil

 

Instructions:

In a food processor, add the cream cheese and green onion then mix until well blended. Add salt as desired. In a skillet, heat the olive oil on medium high before adding the asparagus and allowing it to cook for 5-7 minutes or until it reaches your desired tenderness. Finally, roll your cooled asparagus spears in smoked salmon, and top with salt and pepper to taste. Plate your asparagus alongside the cream cheese spread, and it is ready to serve!
