Brunch Skillet: Turkey Polska Kielbasa, Gouda, Butternut Squash, Eggs
We woke up late this morning, and needed a no-fuss low-carb brunch to get the day started. I wanted something quick and easy as well as nutritious. Butternut squash is perfect because it's packed with antioxidants as well as vitamins A and C.
I was able to throw together a quick meal using items we had on hand, and without following any particular recipe. I washed and diced a small butternut squash, and allowed it to cook over medium high heat with Kerrygold butter and rosemary in a cast-iron skillet. I then added leftover chopped red onion, sliced Turkey Polska Kielbasa , shredded Gouda, and three scrambled eggs. I seasoned it all with a dash of Himalayan pink salt and crushed red pepper.
