Parmesan Crusted Green Beans

I don’t think I could ever get tired of green beans. They’re so versatile; they can be seasoned numerous ways and hold up well against various cooking methods. Today, I coated them in freshly grated parmesan cheese and almond flour before roasting them in the oven. Because they were fresh, they maintained their delicious crunch and flavor making them perfect for snacking, or served alongside your favorite dish. Try them out and let me know what you think!

Parmesan Crusted Green Beans
The perfect low-carb snack!
  • 1 lb. Fresh Green Beans
  • 2 Medium Eggs
  • 1/2 Parmesan Cheese (grated)
  • 1/2 Almond Flour
  • 2 tsp. Sea Salt
  • 1 tsp. Black Pepper (ground)
  • Spray Oil
Preheat oven to 400 degrees. Cover sheet pan in a thin layer of spray oil to prevent sticking.Wash green beans and cut off the ends/stems.In a small bowl, whisk the eggs and add the salt and pepper.On a separate plate (or flat surface) combine the almond flour and cheese until well-mixed.A few at a time, cover the green beans in the egg wash before dredging in the flour/cheese mixture.Place green beans on the sheet pan.Bake green beans for 10 minutes, or until they are golden brown.Remove from oven, and sprinkle with salt (to taste).Serve with your favorite dipping sauce and enjoy!
