Whatever the scenario, look to these bruschetta chicken lettuce wraps! Let’s get into the “why”
- They come together in like, ten minutes
- No fancy or hard-to-find ingredients
- They’re inexpensive to make (we’re looking at YOU, grocery inflation)
- They’re good and flavorful, just like you like!
Now, let’s get into the details.
What Ingredients Do I Need?
Chicken Filling
- Ground Chicken – ground chicken is inexpensive and easy to find. It makes a great protein alternative to ground beef for my folks who avoid red meat. My favorite thing about ground chicken is it’s versatility; it adapts well to such a wide array of flavor profiles making it the perfect recipe-starter.
- Balsamic Vinegar
- Salt
- Crushed Red Peppers
- Black Pepper
- Smoked Paprika
- Fresh Garlic
Bruschetta Topping
- Vine Ripened Tomatoes
- Fresh Basil Leaves
- Salt
Other
- Butter Lettuce Leaves – a head of living butter lettuce should not be difficult to locate. You can find it in the produce section alongside bagged greens and prepared salads. With living lettuce, you’ll want to make sure to rinse well to remove the dirt. Be gentle though; the leaves can be a bit delicate, but you’ll find that they hold up well to toppings and fillings.
Are these Lettuce Wraps Keto-Friendly?
Yup. Each serving contains approximately 4 net grams of carbohydrates. Furthermore, this recipe is also Paleo and Whole30 compliant.
How to Make Bruschetta Chicken Lettuce Wraps
Start by cooking the ground chicken in a pan over medium heat. The chicken will take about ten minutes to cook all the way through. As it browns, add the vinegar, salt, crushed red pepper, black pepper, smoked paprika, and minced garlic. Stir well. Once the chicken is cooked and seasoned, remove from heat and set aside.
To create the bruschetta topping (psst…you can do this as the chicken cooks!), simply toss the diced vine-ripened tomatoes, chopped basil, and salt together in a small dish until well-combined.
To assemble the lettuce wraps, just take a couple of butter lettuce leaves, fill with the ground chicken, and top with the prepared bruschetta topping. Fresh and easy!
Tips and Tricks for these Bruschetta Chicken Lettuce Wraps
- You can totally make the bruschetta topping ahead of time. This will allow the flavors to mix even better.
- If you’re going to take this to work in your lunchbox, store each element separately. You can keep the butter lettuce in a zip-top bag, the bruschetta topping in a small container with a lid, and the chicken in a third container of your choosing. When it’s time to eat, simply heat the chicken up a bit, and assemble the wraps.
- If you’re not fond of ground chicken, you can always use your favorite cut of chicken. Just cook and season as your normally would, making sure the chicken is cut into small, bite-sized pieces.
