Tips, Tricks, and Notes
- When using an indoor grill pan, skewers are optional.
- If using an outdoor charcoal grill, be sure to soak the skewers first to prevent burning.
- If you experience difficulty forming the patties or getting the meat to stick together, try doing some additional mixing with your hands to help with the binding.
- You can also form the patties, and allow the mixture to rest for 20-30 minutes to assist with the binding.
- Use gloves if handling raw chicken gives you the ick.
- If you want to taste the mixture to ensure that it’s seasoned to your liking, take a small portion and form a tiny patty or meatball. Cook the small portion and taste it before cooking the entire batch.
