I’ve become something of a sauce and spice queen. I’ve been whipping homemade garlic powder, lemon pepper, blackened seasonings, pumpkin spice, salad dressings – you get my point, I’m sure.
There’s something deeply satisfying about taking the time to hand craft even the smallest elements of a meal. However, I’m nothing if not a realist. We ain’t always got time for that. Luckily, this semi-homemade chipotle aioli comes together in just 5 minutes! You can whip this up for a dinner party the night before, refrigerate it in an airtight container, and forget about it until it’s time to serve. Side note: if you randomly get the urge to pronounce “forget about it” as “Fuhgeddaboudit” (and you know what I mean), then call me. You’re my people. Let’s move on.
What is Aioli?
This question is a little tricky. These days, aioli tends to refer to mayonnaise that has been punched up with garlic, and any other spices and seasonings. Flavored mayo, if you will. So when you see aioli on menus and at the grocery store, this is probably what you’re getting. Heck, that’s what you’re getting with this recipe as well.
Traditional, authentic aioli, however, refers to an emulsion of olive oil, garlic, and salt. Sometimes egg yolk.
Is Chipotle Aioli Spicy?
My chipotle aioli gets its heat from canned chipotle peppers in adobo sauce. If you were to taste the adobo sauce on its own you may find it quite spicy, depending on your heat tolerance. However, you’ll find that after being mixed with the mayonnaise, the heat is quite muted. For this reason, I tend to be very generous when adding the adobo sauce to my chipotle aioli.
Note: If you’re uncertain about how much spice you want, a best practice is to add the adobo sauce to your aioli a teaspoon at a time, tasting as you go.
To take things up a notch, you may opt to chop up a couple of the actual peppers from the can and add them to your aioli. I tend to use just the sauce, and save the actual peppers for use in other meals.
Is Aioli Keto-Friendly?
A one tablespoon serving is this sauce contains approximately 97 calories and 1 gram of carbohydrates, making it suitable for a low-carb or keto-friendly lifestyle.
What Ingredients Do I Need?
The ingredients for this sauce are super easy-to-find, and you may have many of these items on hand already.
- Mayonnaise – since this is the base for your sauce, you’ll want to use a real, high-quality mayonnaise – no whips or dressings
- Fresh Garlic – freshly minced garlic
- Kosher Salt – already in your cabinet or salt cellar, I know it
- Black Pepper – cracked
- Adobo Sauce – the adobo sauce will come from canned chipotle peppers in adobo sauce. These are very inexpensive and easy-to-find. Look for then anywhere you get your other canned/jarred peppers, such as jalapeños.
- Lemon Juice – fresh-squeezed goodness
How to Use Chipotle Aioli
I think the better question would be, how can’t you use this sauce. It’s great for all thing dipping – fries, veggies, appetizer trays. It also makes a great addition to burgers, sandwiches, and seafood. One of my absolute favorite ways to use this sauce is in my chipotle aioli deviled eggs with chili crisps. Talk about flavor.
How to Store and How Long Does it Last
Store this chipotle aioli in a sealed, air-tight container in your refrigerator for up to two weeks.

Ingredients
- 1 cup Mayonnaise
- 3 Garlic Cloves, minced
- 1/4 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Adobo Sauce*
- 1 teaspoon Lemon Juice
Instructions
- In a small bowl, combine the mayonnaise, minced garlic, salt, black pepper, adobo sauce, and lemon juice.
- Whisk well until the sauce is creamy and smooth.
- Keep refrigerated and covered when not in use.
