I can’t believe it’s 2020! I’m not even going to pretend that I didn’t indulge during this past holiday season. I totally did and I honestly don’t even feel bad about it. I shared meals and experiences with my friends and family that I will remember for a lifetime. Notice, I didn’t say overindulge. When I first transitioned to keto my mindset was so different. I would sometimes get into the habit of categorizing food as either good or bad. The only “bad” food is food that isn’t enjoyed. And liver. I don’t like liver.
Now that keto has helped me lose well over 50 pounds (you can read that story by clicking here), I’ve realized more than ever how important balance and flexibility are. I go through cycles where I’m strictly keto, but there are also periods where I follow just a plain old low-carb diet. They’re both very effective for me and I don’t try to hide the fact that sometimes I allow room for more carbs in my life.
Now, this isn’t to say that I think food should be a free-for-all and we should over-indulge at every turn. Nope. Everything in moderation. And for us keto folks that holds even truer. Eating carbohydrates in excess can knock us out of ketosis, trigger those pesky cravings that we’ve worked so hard to get rid of, and even leave us moody and bloated. So while I didn’t jump off the deep end into a pool full of cakes and pies, I did allow myself to enjoy the season in a not-so-restrictive way.
A few days ago, someone posted a quote on Instagram that said something to the effect of keto being home. Sometimes we may take a brief vacation, but we always return home. It’s so true. That mindset can be applied to whatever your lifestyle may be. Perhaps the gym is home, but you haven’t been able to go in a while. Maybe your friends are home, but you strayed away from seeing them as much. Maybe art or photography is home, but you’ve been on hiatus. You don’t have to beat yourself up about it or feel like you can’t return. It’s still there waiting for you. You can always go home. In a sense, this recipe was my return home. Keto was waiting for me- warm, welcoming, and delicious as ever.
Grocery Adventures
This asparagus soup started in the produce section of Central Market. Wait, let’s rewind. My husband, Terrance is crazy about asparagus. It’s almost irrational, actually. He could eat it every meal of every day – and has even gone on stints where he’s done exactly that. Now, I consider myself a pretty healthy eater but there are not a lot of circumstances that leave me desiring asparagus for breakfast. It does happen every once in a blue moon, though. Like this smoked salmon wrapped asparagus recipe I posted last year. That was delicious. I’m just not as wild about it as he is. It feels like I’ve eaten it in every way possible, and while it’s healthy and delicious, it’s not particularly exciting.
Ok, back to Central Market. We arrive and I buy my 1-year-old a 25 cent banana to keep him busy on our excursion, a plan that backfired mere minutes later.
Then, standing in the produce section I see it – perfectly placed rowsof beautiful, fresh asparagus. Terrance and I lock eyes. He knows he wants it. I know that he wants it. He knows that I know. And I know that he knows that I know. I start sweating. The baby throws a banana chunk on the floor that a random dad immediately (accidentally) smashes with his New Balance sneaker. The asparagus is in our cart.
I’ve had asparagus every type of way and with every type of sauce. Grilled, roasted, baked, boiled, sautéed, I’ve had and enjoyed them all. Not canned, though. Canned asparagus gives me the creeps. I was dreaming up new and interesting ways to enjoy it when I decided to develop a cream of asparagus cheddar soup recipe. It’s the wintertime so the weather definitely calls for something a bit more heart and warm.
A lot of people join the keto lifestyle at the top of the year, and this recipe is perfect for beginners. With cheddar and heavy cream, it is truly low carb/high fat which is the premise of the keto diet. Aside from chopping and processing the asparagus, this recipe is not labor intensive at all. You could even try it in the crockpot. Easy.

Moving on. You will almost certainly have leftovers, which is great for meal prepping and desk lunches. This would be great topped with roasted asparagus, bacon, additional shredded cheddar, or your favorite keto crackers. You may even make these cheese crisps I posted a while back if you need a little extra crunch. Now, I was at a different place in my blogging journey when I posted some of those older recipes, so withhold your judgement. Ha!
Easy Asparagus Cheddar Soup | Low-Carb & Keto Friendly
Since I no longer own an immersion blender, I started by chopping my asparagus to roughly quarter-inch pieces before adding them to food processor. With the dial set to “puree” I processed my asparagus for about 1 minute, or until no solid pieces remained. Since my recipe calls for two bunches of asparagus and my food processor is relatively small, I had to puree in batches.
In a pot over medium high heat, I allowed the butter to begin melting before adding the chopped garlic. The smell was heavenly. I then tossed in my pureed asparagus, seasonings, and chicken broth, stirred, and allowed it to come to boil. Finally, I stirred in the heavy cream and shredded cheddar cheese. Reduce heat to low, cover with a lid and allow to simmer at least 30 minutes. A quick and easy keto dinner, perfect for busy weeknights.

Cream of Asparagus Cheddar Soup | Keto & Low-Carb
A simple and delicious keto soup recipe using fresh asparagus, chicken broth, cheddar, and cream.
Ingredients
- 2 bunches asparagus
- 2 tbsp. salted butter
- 4 garlic cloves, chopped
- 32 oz. chicken broth
- 3 tsp. sea salt
- 1 tsp. cracked black pepper
- 1/2 tbsp. dried basil
- 1/2 tbsp. paprika
- 1/2 tbsp. chili powder
- 3/4 cup heavy cream
- 1 cup shredded cheddar cheese
- parsley for serving, optional
Instructions
- Begin by washing the asparagus and removing the tough ends. Cut stalks into 1/2 inch pieces.
- Add asparagus to food processor, set to "puree," and process for about one minute and set aside.
- In a large pot over medium heat, begin melting the butter.
- Add the garlic and sauté until it begins to release an aroma.
- To the pot, add the asparagus, broth, salt, pepper, basil, paprika, and chili powder. Stir until well mixed and allow to come to a boil.
- Finally, stir in the cream cheese, reduce heat, cover with lid, and allow to cook for 30 minutes.
