These Creamy Tuscan Chicken Meatballs are so easy, so flavorful, so fast, and so good! The dish is done in less than 45 minutes, making it perfect for a weeknight dinner. The ingredients are simple, but pack a big punch. I’m certain that once you try this it will become a dinnertime staple. The best part is that the recipe is low-carb and keto-friendly.

Do You Use Breadcrumbs to Bind these Chicken Meatballs?

No, I wanted to keep these meatballs as low-carb as possible. I regularly buy a box of pork rind “breadcrumbs” from my favorite grocery store, but I did not use that product in this recipe. I try to keep the ingredients in my recipes as accessible as possible, and I do not believe that those keto-friendly breadcrumbs are available everywhere just yet.

All I use to bind these chicken meatballs is parmesan cheese and one egg. They hold together beautifully without falling apart.

What Do You Season the Meatballs with?

  • Kosher Salt
  • Italian Seasoning
  • Onion Powder
  • Chili Powder
  • Garlic Powder

Are the Meatballs Baked or Cooked Stovetop?

These chicken meatballs are cooked for 30 minutes at 400 degrees F on a parchment paper lined baking tray. You have the option of searing them first if you prefer more color to your meatballs. Searing also adds additional flavor, especially if eating the meatballs as a standalone dish. Since these will be added to sauce for Tuscan Chicken Meatballs, I opted not to sear them prior to baking. They are delicious either way

Can I use Beef, Pork, or Turkey for this Recipe?

Absolutely. Feel free to sub your favorite ground protein into this recipe. Just be mindful of cook time, ensuring that the meatballs are done in the center without being overcooked.

How Many Grams of Carbs Per Serving Does This Recipe Contain?

This recipe contains 6 net grams of carbs per serving making it suitable for a low-carb or ketogenic lifestyle.

Can I Double This Recipe?

This recipe can be doubled to feed a crowd, or even halved if you need dinner for two.

How to Make Creamy Tuscan Chicken Meatballs | Keto, Low-carb

Meatballs

Preheat oven to 400 degrees

Start by adding one pound of ground chicken to a large bowl.

Season the chicken with the salt, Italian seasoning, onion powder, chili powder, and garlic powder.

Add the parmesan cheese and egg to the chicken mixture.

Use your hands to mix all of the ingredients until well combined.

Roll ground chicken into 16 evenly sized meatballs and place on a baking sheet that has been lined with parchment paper.

Place into the oven and allow to bake for 30 minutes.

Sauce

In a large skillet, add unsalted butter.

As the butter begins to melt, add minced garlic and fresh oregano; allow to cook for 2-3 minutes – until they become aromatic.

Add the half and half, parmesan cheese, and chicken broth. Stir and allow the liquid to come to a gentle boil.

Add fresh spinach – stir frequently as the spinach shrinks

Stir halved cherry tomatoes and lemon juice into the mixture.

When meatballs have finished cooking, add them to the skillet containing the sauce; ensure that all meatballs are coated in the sauce and that the ingredients are well dispersed. If desired, go ahead and add more cheese and fresh oregano to the top.

An optional step is to stir in a few red pepper flakes for a spicy kick.

That’s it! You’re done. Dinner was easy as heck and on the table in no time. This recipe is incredibly family-friendly and I’m certain that even your pickiest eaters will love it.

Ingredients

Meatballs

  • 1 pound Ground Chicken
  • 2 teaspoons Extra Virgin Olive Oil
  • 1/2 teaspoon Salt
  • 1 teaspoon Italian Seasoning
  • 2 teaspoons Onion Powder
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 cup Parmesan Cheese
  • 1 Large Egg

Sauce

  • 1/2 tablespoon Butter
  • 4 Garlic Cloves, minced
  • 1 tablespoon Fresh Oregano
  • 1/2 cup Half and Half
  • 1 cup Parmesan Cheese
  • 1/2 cup Chicken Broth
  • 1 Cup Fresh Spinach
  • 1 cup Cherry Tomatoes, halved
  • 1 tablespoon Lemon Juice, freshly squeezed

Instructions

Chicken Meatballs

  1. Preheat oven to 400° F
  2. In a large glass bowl, combine all ingredients and mix well using your hands. Take special care to ensure that ingredients are evenly dispersed.
  3. Roll into 16 large meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 30 minutes.

Sauce

  7. If desired, top with additional oregano and cheese.

Notes

For a spicy kick, add a bit of crushed red pepper flakes.

Heavy cream can be used in the place of Half and Half
