I have a deep love for chicken salad. My dad used to whip up a batch on a fairly regular basis and we would snack on it for days. Whether on sandwiches, with crackers, celery sticks, or even straight up with a spoon it was (and still is) one of the best ways to use up leftover chicken. His version always includes hard-boiled eggs and a pinch of sweetness – so does mine! I’m not sure if the hard boiled eggs are a southern touch, but I love the additional texture, creaminess and protein that they bring.
I may be written out of his will for this next part, though. While his version, without fail, always calls for Miracle Whip (not mayonnaise – it needs to be Miracle Whip specifically) I opt for an alternative that is free of soybean oil, a common ingredient in mayo and Miracle Whip. But I don’t compromise on flavor! Let’s get into some details
What Ingredients Do I Need?
- Chicken Breast – I use the breasts of a store-bought rotisserie chicken. I make sure to remove the bones and skin and chop/shred the chicken into bite-sized pieces.
- Eggs – Hard boiled eggs including the yolk.
- Celery – Chopped celery. A classic ingredient.
- Red Onion – chopped
- Shallot – chopped
- Garlic – Minced garlic gives this chicken salad a little extra punch.
- Sweet Relish – I find that this gives the chicken salad the perfect hint of sweetness.
- Dried Dill – you may opt for fresh, you will just need to use more since dried herbs are more concentrated/potent.
- Black Pepper
- Coriander
- Soybean Oil-Free Mayonnaise – I will list some brand suggestions below.
- Dijon Mustard
- Kosher Salt – I save the salt for the very end so that I can taste the mixture and adjust as needed.
Brands of Soybean Oil-Free Mayonnaise
There are tons and tons and mayonnaise alternatives at most supermarkets. Gone is the need for a special trip to a different store. Here are some that I find most commonly:
- Chosen Foods Classic Mayo – This is the brand that I used for this recipe. The ingredients include avocado oil, filtered water, egg yolks, whole eggs, distilled white vinegar, mustard, salt, and rosemary extract.
- Kroger Olive Oil Mayo – I have not personally tried this variety, but it does tend to be a less expensive option. The ingredients include olive oil, cage free whole eggs and egg yolks, distilled vinegar, and lemon juice.
- Primal Kitchen Avocado Oil Mayo – This brand is a favorite of mine. It’s sugar-free, gluten-free, keto-friendly, Whole30 and paleo compliant. The ingredients include avocado oil, organic vinegar, organic eggs, organic egg yolks, salt, rosemary extract, and mustard seed extract
- Sir Kensington’s Classic Mayonnaise – This brand is keto certified and gluten-free. The ingredients include sunflower oil, certified humane cage free egg yolks, water, distilled vinegar, salt, cane sugar, lemon juice, citric acid, and lemon oil.
What Tools Do I Need?
- Cutting Board – to chop the chicken breast, eggs, and vegetables.
- Sharp Knife
- Mixing Bowl – large enough to hold all of the ingredients
- Mixing Spoon
Storage
You’ll want to store the chicken salad in an airtight container. It will remain fresh in the refrigerator for up to 4 days. Keep the chicken salad refrigerated until ready to serve; try not to leave it on the counter for longer than an hour. If traveling with the dish for a picnic lunch, use ice and frozen gel packs to ensure that the food remains safe for consumption.
How to Make Dairy and Soy-Free Rotisserie Chicken Salad
- Prepare the chicken breast. Remove the skin and bones and chop/shred the meat into bite-sized pieces. Add the chicken to a large mixing bowl.
- Chop the eggs, celery, red onion, and shallot. Mince the garlic. Add them all to the mixing bowl.
- Add the sweet relish, dill, pepper, coriander, mayonnaise, and mustard. Mix well with a spoon, adding more mayonnaise if needed to increase the creaminess of the mixture.
- Taste the mixture and add salt, as desired.
Serving Suggestions
- Make sandwiches with Sola brand keto-friendly bread.
- Eat with celery sticks or slices of cucumber.
- Serve with your favorite brand of low-carb crackers.

- 12 oz Chicken Breast
- 3 Large Eggs
- 1/2 cup Chopped Celery
- 1/4 cup Chopped Red Onion
- 1/4 cup Chopped Shallot
- 2 Garlic Cloves, minced
- 1/4 cup Sweet Pickle Relish
- 1 teaspoon Dried Dill
- 1/2 teaspoon Black Pepper

Instructions
