My recipe has just 5.2 net grams of carbs per serving making it perfect for anyone following a low-carb or ketogenic lifestyle. Enjoy this meal without worrying about if it will throw you off your plan.
What Do You Use in the Place of Breadcrumbs?
I use pork rind “breadcrumbs” in this recipe. Making your own pork rind breadcrumbs is as easy as buying a bag of pork rinds and using your hands or a food processor to crush them up. There are also now several brands that sell pork rind breadcrumbs already crushed. I opted for the latter since I will be using them a lot to test recipes. I will add a link to the brand I used in the recipe card below.
What Type of Flour is Used in this Recipe?
I used almond flour, which is the flour alternative that I find works best for me in keto and low-carb cooking. I have not tested this recipe using any other type of flour
How Long Does it Take to Make Keto-Friendly Chicken Cordon Bleu?
After prepping all of your ingredients, this recipe only requires about 20 minutes of active cook time. A delicious meal need not take the entire evening to prepare!
Can I Customize this Recipe?
The world is your – you can add any type of deli meat/cheese combination to the center of your chicken breasts that you want. But once you deviate too far, it’s no longer considered chicken cordon bleu. It’ll probably still be delicious though. I recognize that this recipe calls for shredded swiss, where many other recipes call for swiss slices. Use what you have available.
What if I Don’t Have a Kitchen Mallet?
If you don’t have a mallet or meat tenderizer to flatten your chicken breasts, you may try using:
- A Rolling Pin
- A Large Heavy Skillet
- Wine Bottle
How to Make Chicken Cordon Bleu | Keto, Low-Carb
Preheat oven to 375 degrees F.
Start with two large boneless skinless chicken breasts.
Place chicken breasts on a cutting board and cover with clear plastic wrap.
Using a kitchen mallet or rolling pin, pound/flatten each chicken breast until they reach approximately ¼ to ½ inch in thickness.
Season with salt, black pepper, and italian seasoning or dried herbs.
Place two pieces of thinly sliced, fully cooked ham atop each flattened chicken breast.
Add a ½ cup of shredded swiss cheese to the top of each chicken breast.
Carefully roll each chicken breast, burrito style, tucking the corners as you roll. Secure with toothpicks if needed.
Season the outside of each rolled chicken breast with additional salt, pepper, and Italian seasoning/dried herb blend.
The next step is to prepare your dredging station – you’ll need two large plates or flat surfaces, and one small bowl for the egg wash.
To one plate you’ll add almond flour and to the other you’ll add crushed pork rinds.
In the bowl, whisk together two large eggs.
One at a time, dredge both sides of each chicken breast in the almond flour. Shake off any excess.
Next, dredge both sides of each chicken breast in the egg wash. Shake off any excess.
Dredge both sides of each chicken breast in the crushed pork rinds. Shake off any excess.
Add 1/2 cup of a high heat cooking oil to a large cast iron pan; my favorites include grapeseed oil and avocado oil.
Allow the oil to heat over medium high heat for two minutes.
Add the stuffed chicken breasts to the pan and allow them to cook for three minutes per side.
Transfer the pan to the preheated oven and allow it to cook for an additional 15 minutes.
Remove pan from the oven, allow to cool for 5 minutes, slice the chicken breasts and serve.
And just like that, dinner is done and you’re on your merry way.

Ingredients
- 2 Chicken Breasts, boneless, skinless
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 teaspoon Italian Seasoning or Dried Herb Blend
- 4 Slices Ham, fully cooked, thinly sliced
- 1 cup Swiss Cheese, shredded
- 1 cup Almond Flour
- 2 Large Eggs, whisked
- 1 Cup Crushed Pork Rinds/Pork Rind Breadcrumbs
- 1/2 Cup Grapeseed Oil or any high heat cooking oil
Instructions
- Preheat oven to 375 degrees F
- Cover both chicken breasts with plastic wrap. Use mallet to pound chicken breasts to 1/4 to 1/2 inch in thickness.
- Season flattened chicken breasts with a portion of the salt, pepper, and Italian seasoning.
- Layer 2 slices of ham and 1/2 cup of Swiss onto each chicken breast.
- Roll each breast, burrito style, taking care to secure any loose corners. Secure with toothpicks if needed.
- Dredge both sides of each rolled chicken breast in the almond flour, shaking off any excess.
- Dredge both sides of each rolled chicken breast in the egg wash, shaking off any excess,
- Dredge both sides of each each rolled chicken breast in the pork rind breadcrumbs, shaking off any excess.
- In a large cast iron skillet, heat the oil over medium high heat for two minutes.
- Cook chicken breast in the hot oil for 3 minutes per side. Transfer the pan to the preheated oven and allow it to cook for an additional 15 minutes.
- Remove from oven, allow to rest for 5 minutes, slice, and serve.
