Peace family.
Growing up, I was not the biggest fan of avocado or guacamole. I thought both were downright disgusting. As a Texan, this is a fact that brings me immense shame. Now that I’m an adult – with grown woman taste buds- I realize just how wrong I truly was. Avocados are actually one of my favorite fruits and eating guacamole is pretty much a way of life. I could eat it every single day. Avocados are delicious and jam-packed with fiber and healthy fats. Admittedly, I can (and often do) eat them alone with just a spoon and a little salt and pepper. They are so clutch, especially when following a low-carb or ketogenic lifestyle.
How to Make Easy Keto Guacamole from Scratch
This scratch-made, easy guacamole is so quick to make. I recommend making it as close to the serve time as possible to prevent browning of the exposed (to air) avocado. You can chop your vegetables in advance to make the process even faster when it’s go-time!
Start by gently mashing three avocados in a bowl. This should go without saying, but discard the pit and the skin.
Then, one at a time you’ll add the following, while continuing to gently mash between each ingredient:
Diced Roma Tomato:
Chopped Red Onion:
Diced Jalapeno:
Freshly Squeezed Lime Juice
Chopped Cilantro:
After that, your final step is to serve and enjoy. If you’re keto, I recommend eating this with pork rinds, sliced cucumber, or homemade tortilla chips (oven-baked and sliced low-carb tortilla shells). If you’re not keto, plain old chips will do just fine.
As usual, try it out and let me know what you think!
Peace,
Adri
