You can make compote out of any number of fruits, but my absolute favorite by far is strawberry compote. It just takes me back to my childhood when family gatherings would include rich and decadent (in a good way) cheesecake drizzled with delicious strawberry compote. The thing is – it was often store-bought. While these versions were perfectly fine, homemade is so much better. And it’s easy as heck, so in reality there’s no good reason to buy it premade. Okay? Okay!
What is Compote?
Compote, by definition, is simply fruit that has been either cooked or preserved in syrup.
Compotes can be made from:
- Strawberries (obviously)
- Blueberries
- Raspberries
- Blackberries
- Apples
- Pears
- Peaches
Often times, other spices and additives are combined to add flavor and depth to the compote such as:
- Vanilla
- Cinnamon
- Citrus Peel, Juice or Zest
- Spices
- Herbs
This low-carb, keto-friendly strawberry compote recipe is incredibly delicious, customizable, and simple to make, so let’s get into it.
How to Make Quick & Easy Strawberry Compote
I start with one pound of fresh, beautiful strawberries.
I then thoroughly clean, destem, and halve the berries.
Next, I add the berries to a saucepan.
To that I add:
- Swerve – You can use your favorite/preferred sugar alternative/sweetener. If you’re not keto or low-carb, you can still follow this recipe using traditional sugar. Swerve measures and tastes like sugar without a weird aftertaste, to me. My favorite thing about Swerve is that it has zero net carbs and is non-glycemic/non-impact which means it does not raise your blood sugar.
- Lemon Zest
- Salt – Just a pinch
- Water
Over low heat, I stir this mixture continuously for about 10-15, or until the compote thickens to my desire consistency, without the fruit falling apart too much.
An option step, for a more savory element is to stir in fresh herbs such as:
- Mint
- Basil
- Thyme
The combination of strawberry and basil is a flavor profile that I absolutely love, which you already know if you’ve saw my Grilled Mahi Mahi with Strawberry Basil Salsa. So damn good, every single time.
That’s it. Easy as pie – which this compote pairs well with.
Ways to Use Strawberry Compote
You can eat the compote straight up, or with:
- Toast
- Pancakes
- Pound Cake
- Cheesecake
- Shortcake
- Ice Cream
- Yogurt
This should be good for up to one week, sealed, in the refrigerator, but my ultimate advice is to use it right away.

Ingredients
- 1 pound Fresh Strawberries, destemmed and halved.
- 2 tablespoons Granular or Confectioners' Swerve (or your preferred sugar alternative)
- 2 teaspoons Lemon Zest
- Pinch of Salt
- 1/4 cup Water
- Fresh Herbs (such as Mint, Basil, Thyme) to taste, optional
Instructions
- Clean, remove the stem, and halve the strawberries
- Add berries to saucepan, followed by the Swerve, lemon zest, salt and water.
- Over low heat, slow stir all ingredients for 10-15 minutes, or until sauce thickens to desire consistency without the fruit falling apart.
Notes
An optional step is to stir in fresh herbs.
