I think we’ve all tempted fate and dipped our spoons (or fingers – yikes) into a bowl dreamy, irresistible chocolate chip cookie dough. Our mothers told us not too. The packaging told us not to. The FDA told us not to! We did it anyway and we turned out fine right? Right (nervously)?!
While I’m not telling you to make a practice of eating raw dough of any kind, I understand the appeal. Side note: can we all agree that slightly underbaked cookies are the best?
These edible cookie dough bites are worry-free. They contain no eggs or other ingredients that need to be baked or treated prior to eating. Salmonella? We don’t know her. They come together very quickly, too. Beat together a few ingredients and you’re in edible cookie dough heaven. I personally prefer to let the dough chill, but that’s totally optional.
It’s important to note that this dough is not meant to be cooked. The recipe will not work, as it does not contain the necessary agents for baking.
What Ingredients Do I Need?
- Butter – salted butter; softened (not melted). I prefer a higher quality butter such as Kerrygold since it’s a key ingredient.
- Swerve – this recipe uses Swerve brown sugar replacement.
- Almond Flour – super-fine almond flour from blanched whole almonds. You can find this near other flours in the supermarket.
- Vanilla Extract – I’m willing to bet you already have some hanging out in your pantry.
- Swerve Keto Friendly Chocolate Chips – you may opt to use your favorite brand of sugar-free chocolate chips.
Almond Flour Texture
Depending on the brand of almond flour you buy, you may find your dough to be slightly gritty. To avoid this, I only buy finely ground almond flour. A brand that I always trust is King Arthur Baking. In this instance, I’d stay away from unbalanced or natural almond flour, as those options also tend to be grittier.
Is It Safe to Eat Raw Almond Flour
Unlike traditional wheat flour, which needs to be treated prior to consuming, blanched almond flour is 100% safe to consume raw.
What Makes This Recipe Keto-Friendly?
This recipe uses almond flour which contains just 1 net gram of carb per serving (2 tablespoons). We also swap out traditional sugar and chocolate chips for Swerve brand sweetener. Swerve measures 1:1 with real sugar, but does not impact blood glucose, making it my favorite sugar alternative for low-carb and keto-friendly recipes/
What Tools Do I Need?
You only need a few simple tools to make this recipe:
- Mixer – this can be a hand mixer or a stand mixer.
- Mixing Bowl
- Spoon or Rubber Spatula– for stirring in the chocolate chips.
- Tupperware – or any type of container that can store the cookie dough in your refrigerator.
How to Make Keto-Friendly Edible Cookie Dough
- First, grab your hand or stand mixer; whichever is most convenient.
- Grab your softened butter and swerve; add them to a mixing bowl and beat until the mixture becomes creamy and smooth.
- Next beat in the almond flour and vanilla extra; no need to overwork the mixture. Beat only until a smooth and cohesive dough forms.
- Stir in the chocolate chips using with a spoon or silicon spatula.
- Next, roll the dough into 10 evenly sized balls. You may opt to make them smaller or larger than mine, which will result in a different yield.
- You can eat this dough right away, but I prefer to let it chill in the refrigerator for a least an hour.
Edible Cookie Dough Storage
For maximum freshness I would store these in an airtight container in the for up to 5 days in the refrigerator, and up to 3 months in the freezer. Remember that this dough is not intended to be cooked as it does not contain the necessary agents for baking.

Ingredients
- 1/2 stick Salted Butter, softened
- 1/2 cup Swerve (Brown) Zero Calorie Sweetener
- 3/4 cup Almond Flour
- 1 teaspoon Vanilla Extract
- 1/4 cup Swerve Keto Friendly Chocolate Chips (or more, to taste)
Instructions
- Using a hand or stand mixer, beat the softened butter and Brown Swerve together until a creamy mixture forms.
- Lightly beat the almond flour and vanilla extract into the mixture until a cohesive dough forms.
- Use a spoon to stir in the chocolate chips.
- Use your hands to form/roll the dough into 10 evenly sized balls.
- Chill in the refrigerator for at least one hour.
Notes
Swerve sweetener is zero-calorie, non-glycemic, has no impact on blood glucose or insulin levels.
