This is one of those recipes that I could barely photograph. I was far too busy sneaking buttery, herby, lemony pieces of perfectly cooked chicken. Talk about addicted. And slightly obsessed.
I’m certain that once you try this recipe, you’ll understand exactly what I mean. These chicken bites are tender, flavorful and take less than 30 minutes from start to finish. There’s nothing stopping you really, except maybe a quick trip to the market. Let’s get into the details.
What Ingredients Do I Need?
- Extra Virgin Olive Oil
- Garlic – minced
- Fresh Herbs – to save costs, I buy a poultry blend pack of herbs that contains rosemary, sage, and thyme. You can also purchase these herbs separately, of course.
- Lemon – the juice of one lemon
- Chicken Thighs – boneless skinless chicken thighs cut into small, bite sized, pieces.
- Kosher Salt
- Black Pepper
- Butter – unsalted.

This recipes yields about 4 serving, each being 1/4 pound. Each serving contains approximately 1 net gram of carbohydrates, making it low-carb and keto-friendly. Furthermore, the recipe is gluten-free.
How Do I Make Herby Lemon Butter Chicken Bites?
First, heat the extra virgin olive oil in a large skillet over medium heat. My preference is to use a cast-iron skillet, but this is not necessary.
To the skillet, add the minced garlic and two tablespoons of the chopped herb blend. Cook for an additional 2 minutes. Set the rest of the herbs aside to be added later in the cooking process.
Add the chicken thighs, salt, and pepper, to the skillet and allow to cook – stirring frequently – for ten minutes or until completely done.
When the thighs have nearly finished cooking, add the butter and remaining chopped herbs, stirring well to ensure that the ingredients are evenly mixed. I add the butter and additional herbs toward the end to ensure a fresh taste.
