It’s the first day of fall, and literally no one is more excited than your girl. This has been my favorite season since the very earliest memories of my life. Football, hoodies, state fairs, leaves, and cooler temps are all very near and dear to mi corazón. Something about the changing seasons always fills me with so much hope. It refreshes my mind, my love, my faith. It reminds me that whether good or bad, all things will pass. What better time to meditate and remain grounded and present? The crisp, cool fall air just rejuvenates my entire being.
Perhaps the greatest thing about this time of year is the seasonal food and beverages we get to enjoy. The scents of chili, soups, stews, ciders, and baked goods will soon fill our homes, offices, and favorite sidewalk cafes. Allow me to submit a low-carb, keto-friendly* fall beverage recipe into your autumn line-up. At 12 grams net carbs per serving, this Mexican hot chocolate is sure to please. It’s creamy and smooth, much like its traditional counterpart, but packs a spicy aftertaste that your palate will appreciate. If you’ve never had Mexican hot chocolate you’re in for a treat. It’s like the stuff in the blue box we all grew up drinking, but elevated. Don’t let the spices scare you; they blend well with the chocolate in the most magical way. The hot chocolate alone is vegan-friendly, however I did top my beverage with my homemade keto-friendly whipped cream. Low-Carb Mexican Hot Chocolate
A spicy seasonal favorite that will delight you and your guests while allowing you to adhere to your ketogenic lifestyle.
Ingredients
- 3 cups Almond Milk (unsweetened)
- 4 tbsp Unsweetened Cocoa Powder
- 2 tsp Vanilla Extract
- 4 tbsp Swerve
- 28g Lily's Original Dark Chocolate
- ½ tbsp Ground Cinnamon
- 1 tsp Allspice
- ½ tsp Cayenne Pepper
- 1 pinch Ground Clove
- 1 pinch Sea Salt
- Cinnamon sticks for stirring (optional)
Instructions
- Add the milk to a medium saucepan over medium-high heat.
- Slowly whisk in the cocoa powder, vanilla, swerve,and dark chocolate.
- Allow the mixture to heat for 3-5 minutes, without coming to a full boil, while continuously whisking.
- Add the cinnamon, allspice, cayenne, clove and sea salt while continuing to whisk.
- Taste mixture and make any final adjustments.
- Pour into mugs, add any desired toppings, and serve.
