Creating a pancake board is an easy, inexpensive, and gorgeous way to prepare a lavish breakfast or brunch spread for your family and friends. I started seeing pancake boards spring up on my news feeds within the past year or so, and I ignored them for the most part; most of the offerings looked very sugary and high-carb. Not ideal for me. But with a few tweaks I was able to make this work with my lower carb lifestyle, while still appealing to my broader group of guests.
What is a Pancake Board / Brunch Board?
Upon first glance pancakes boards appear very similar to charcuterie boards, but there are some key differences. In the post for my keto charcuterie board that I made for Valentine’s Day, I explained that charcuterie is simply prepared cured meat products, often served cold. It can also refer to the act of arranging such meats – typically pork products- in a spread with other ingredients like crackers, fruit, assorted cheese, etc.
While a pancake board may include some charcuterie elements- or be arranged in a charcuterie style design- the main focus is pancakes and related toppings as well as other breakfast and brunch elements.
To me, creating a pancake board makes sense for holidays, weekend brunch with friends, or anytime you’re hosting a bunch of folks for a meal. Instead of keeping each ingredient, topping, or side in a separate dish, you can lay them out in a gorgeous and easily accessible way; think buffet style. This is a very shareable and communal type of arrangement.
In lieu of a formal recipe I’ll be sharing my favorite products and techniques for perfecting various elements of my pancake board, starting with the star of the show.
Pancakes
In order to get perfectly shaped mini pancakes, I use a small egg ring or cookie cutter. After coating the skillet with baking spray or melted butter, I place the egg ring in the skillet, and pour in the batter to desired thickness. Once the shape has set, I lift the ring, and continue cooking as normal or per package instructions. If you need a good almond flour pancake recipe, check out my vanilla rum almond flour pancakes.
For this board however, I used Swerve brand pancake mix and it was wonderful. The instructions are easy to follow and they taste fantastic, especially with butter.

Butter
One of my favorite brands of butter is Central Market European style salted butter. The quality is great without being prohibitively expensive. I definitely recommend trying it out on your pancakes, and in other recipes.

Bacon
My absolute favorite way of making perfectly crisp bacon is in the oven. It turns out great and evenly cooked every time. Most brands will include oven instructions, but a good starting place is 375° for 15-20 minutes. Using parchment paper underneath makes for easy cleanup!

Scrambled Eggs

I like my scrambled eggs cooked low and slow. I whisk my eggs, a bit of heavy cream, and seasonings (salt, pepper, garlic, herbs) in a bowl prior to cooking. Then preheat my skillet over high heat with butter. I then pour in the eggs, reduce the heat to medium or medium low and continuously stir with a rubber spatula until the reach my desired level of doneness. The result is buttery, silky, ribbony, perfectly textured eggs that don’t stick to the skillet. Shredded cheese is always a welcomed addition!

Sausage

I love a good sausage situation. I start with a pound of ground sausage and form them into uniform and perfectly circular patties. If you have the eye for it, you can do this by hand. If not, this is where the small egg ring or small circular cookie cutter can come in handy again! Even a slider press works.

Fruit
I love adding low-GI, keto-friendly fruit to dishes and spreads. Check out my Keto Berry Smoothie Bowl for more on that. For this board, I chose strawberries, blueberries, and avocado. Yes – avocado is a fruit! For an added kick, season your avocado with some freshly cracked black pepper. Just be careful about cutting it too soon. They turn brown very quickly once exposed to air!
Arranging your Board
Once you’ve cooked and gathered all of your ingredients, the only thing left to do is arrange them on your board, pour up some drinks, and enjoy your time with your loved ones. It’s as easy as that!
