This Black History Month, I’ve teamed up with the Dallas Farmers Market to bring you a recipe that incorporates fresh, seasonal produce – and what better than winter greens? They’re so versatile and easy to use in so many of our favorite dishes. My favorite green is the collard. As a Black American, it’s been so fascinating the learn about the history of the collard green in the foodways of my ancestors. Collards make the perfect green for celebrating seasonal ingredients during Black history month, because they are in peak season during the winter.

This Sheet Pan Frittata with Winter Greens checks a lot of boxes. It’s easy-to-make, comes together quickly, and doesn’t require a lot of special tools or tricks. It’s great for feeding a crowd at breakfast or brunch.

What are Winter Greens?

Winter greens are leafy vegetables that are seasonally abundant and available in – you guessed it – winter. These greens are nutritious and easy to incorporate into your favorite recipes.

  • Collard Greens
  • Beet Greens
  • Swiss Chard
  • Kale
  • Broccoli Raab (Rapini)

What Ingredients Do I Need to Make This Frittata?

  • Garlic
  • Red Onion
  • Cherry Tomatoes
  • Baby Bella Mushrooms
  • Winter Greens – I used collards for this recipe
  • Large Eggs
  • Kosher Salt
  • Black Pepper
  • Smoked Paprika
  • Whole Milk
  • Smoked Gouda

How to Make my Sheet Pan Frittata with Winter Greens

  • Preheat oven to 400° F
  • Line sheet pan with parchment paper. To the lined sheet pan, add the minced garlic, sliced red onion, sliced cherry tomatoes, sliced baby bella mushrooms, and chopped greens. Ensure that the ingredients are evenly distributed throughout the pan. Drizzle lightly with extra virgin olive oil.

Place the pan into the heated oven and allow the vegetables to roast for 10 minutes.

Meanwhile, to a mixing bowl, add the eggs. Use a whisk to beat the eggs until the yolks are smooth. Add the salt, pepper, smoked paprika, milk, and shredded gouda, continue mixing until evenly incorporated.

After the vegetables have roasted for 10 minutes, remove the sheet pan from the oven, and immediately pour the egg mixture over the vegetables. You may need to use a silicone spatula to ensure that the eggs are evenly distributed throughout the pan.

Return the pan to the oven and allow to cook for 15 minutes. Remove from the oven and allow the frittata to cool before slicing.

Cook Time: 25 minutes

Ingredients

  • 4 Garlic Cloves, minced
  • ¼ Small Red Onion, sliced
  • 5 ounces Cherry Tomatoes, halved (about 15 tomatoes)
  • 2 ounces Sliced Baby Bella Mushrooms
  • ¼ cup Greens, roughly chopped
  • 12 Large Eggs
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Smoked Paprika
  • ¼ cup Whole Milk
  • 1 cup Smoked Gouda, shredded
