What Ingredients Do I Need?

- Cooking Oil Spray– choose your favorite neutral cooking oil. This will be used to coat the bottom of your pot before cooking the diced onion.
- Medium White Onion – diced
- Garlic Cloves – minced
- Ginger Paste – you can use freshly grated ginger if you prefer.
- Curry Powder – most store-bought curry powder blends do not contain salt, but you’ll still want to double-check.
- Ground Cumin
- Red Pepper Flakes
- Kosher Salt
- Black Pepper
- Chickpeas – canned chickpeas, rinsed
- Vegetable Broth – unsalted
- Canned Diced Tomatoes
- Coconut Milk– (unsweetened, unflavored)
- Lime – juiced
- Cilantro, to taste (for topping)
Why Do Chickpeas Need to be Rinsed?
Rinsing chickpeas reduces the sodium content; most canned beans contain a salty starchy liquid that prolongs the shelf life. You want to rinse them in cold water.
What is Curry Powder?
Curry powder typically contains a blend of turmeric, ginger, garlic, cumin, coriander, fenugreek, bay leaves, celery seed, nutmeg, clove, and red pepper.

How to Make Vegan Chickpea Curry
- Spray the bottom of your pot with you preferred neutral cooking oil spray, and heat one minute over medium heat. I personally like avocado oil spray.
- To the pot, add the diced onion, and cook until translucent
- Add the minced garlic and ginger paste, cook for an additional one minute.
- Next, add the curry powder, ground cumin, red pepper flakes, kosher salt, and black pepper. Stir well. Note: you may opt to blend all of the seasonings prior to beginning, so that you can add them all at one time.
- Add the chickpeas, vegetable broth, tomatoes, coconut milk, and lime juice. Stir well and allow to come to a gentle boil.
- Reduce the heat to low, cover with a lid and allow to simmer for an additional 20 minutes.
- Taste and add additional salt if desired.
