Let me tell you why you’re going to love these Wagyu Beef Meatballs:
- Classic and Comforting: who didn’t grow up eating spaghetti and meatballs? It’s a tried and true weeknight staple for so many of us. Regardless of the different types of seasonings or proteins used, we all know and love this dish to some degree.
- No Fussy Ingredients: okay, one may argue that wagyu beef is a fancy ingredient, however it’s extremely easy to find in many supermarkets. No special trip required. Other than that, all you’ll need is a few seasonings (spice rack staples), an onion, some garlic, an egg, some grated part…easy!
- Italian Flavors: baby, these herbs, seasonings, onion, and garlic are going to have your kitchen smelling good good. Period. And the taste? Damn good!
- Fast and Easy to Make – this recipe comes together in under 30 minutes!
- Minimal Cleanup – for the most part, this is a one pan meal. You will need a mixing bowl though!
- Jar Sauce – before you roll your eyes, just hear me out. We’re going for quick and easy here. There’s a time and a place for homemade sauce, and this ain’t it. The brand I suggest is Rao’s, always. It’s a bit pricey, but worth the spend. It’s high quality, low-carb, and contains no added sugar.
What is Wagyu Beef?
The word “wagyu” literally translates to Japanese Cow. Wagyu beef refers to the meat from Japanese beef cattle. Wagyu typically has more marbling (fat cells) making it more tender and flavorful. This is especially important when eating wagyu, but it is also beneficial when making meatballs. Since my meatballs and low-carb and keto-friendly, I do not use bread or breadcrumbs which usually helps meatballs retain moisture. In this case, the extra fat from the wagyu beef does a lot of the heavy lifting and aids in avoiding dry meatballs.
What is The Carb Count for This Recipe?
Three meatballs (with sauce) contain just five net grams of carbs, making this dish low in carbs and keto-friendly. Furthermore, this recipe is gluten-free when made with Rao’s marinara sauce. If you’re gluten-free and opt to use a different brand, be sure to use one that you know is safe.
What Ingredients Do I Need?
- Wagyu Ground Beef – see above
- Kosher Salt – for seasoning
- Garlic Powder – yes, I use both fresh garlic and garlic powder
- Dried Oregano – I use a half teaspoon of dried oregano; if you’re using fresh oregano, increase the amount to 1.5 teaspoons.
- Black Pepper
- Parmesan Cheese – grated
- Fresh Garlic – minced
- Parsley – finely chopped
- Yellow Onion – diced
- Egg Yolk – large egg
- Avocado Oil – or preferred high heat cooking oil
- Rao’s Homemade Marinara Sauce – or your favorite low-carb pasta sauce.
How to Make Wagyu Beef Meatballs
The process is very quick and easy:
- In a mixing bowl, combine the wagyu ground beef, kosher salt, garlic powder, dried oregano, black pepper, grated parmesan cheese, minced garlic, chopped parsley, diced yellow onion, and egg yolk. Use hands to gently mix until the ingredients are well incorporated. You don’t want to over-mix your meatballs; over working makes the meatballs tough/less tender.
- Using the palms of your hands, for 12 even-sized meatballs. You can use gloves if you don’t like getting your hands dirty, but don’t be afraid to get in there.
- In a large skillet, heat the cooking oil over medium heat.
- Add the meatballs to the skillet, and cook for 4 minutes per side, or until nicely browned on both sides.
- Reduce the heat to medium low and pour in the Rao’s Homemade Marinara Sauce; still well to ensure the meatballs are coated.
- Cover the skillet with a lid and allow to cook for 10 minutes, or until the meatballs are heated through.
- Top with additional parsley and parmesan cheese, to taste.

- 1 pound Wagyu Ground Beef
- 3/4 teaspoon Kosher Salt
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Dried Oregano
- 1/4 teaspoon Black Pepper

- 1 Garlic Clove, minced
- 2 tablespoons Chopped Parsley
- 1/4 cup Diced Yellow Onion
