Stuffed Tomatoes

Peace! As the weather gets warmer, it’s our natural inclination to be drawn to fresher, lighter foods. These stuffed tomatoes make the perfect summer meal! They’re very quick and easy, and require no heat.

You simply remove the stem, cut a small circle in the top, and then use a spoon to gently scrape away the inside of the tomato. You can then stuff with your favorite protein source (chicken, turkey, beef) and your preferred vegetables. In our case it was spinach and mushroom. This is a delicious meal that can be easily modified for vegans and vegetarians.

Although this requires no heat, I opted to top mine with melted cheese, so I placed them in the oven at 350 for about ten minutes. Enjoy!
