Blackened Catfish

blackenedcatfish.jpg

Peace! Apparently I’ve been on a “blackened” kick lately. Remember the tenders? To be honest, I just had a lot of leftover seasoning and was excited to use it again. It’s that good! Don’t forget that if you’re pinched for time or ingredients, or simply don’t feel like blending those dang spices, there are plenty of store-bought blackened seasonings to choose from.

Catfish is the epitome of comfort food to me. I grew up attending family fish-fries, and have a healthy appreciation for catfish po’ boys. I know a lot of folks have strong feelings about catfish but it’s something that I truly enjoy, in extreme moderation. In this recipe, we forego the traditional frying in favor of a low-carb meal that doesn’t disappoint. With the lime juice and salsa, feel free to tweak the measurements to fit your macros. I can’t be held responsible for knocking anyone out of ketosis!
