I don’t need to say much about these hasselback baby red potatoes; they simply speak for themselves. Tender, flavorful, easy to prepare – what more could one even ask for? Seriously. They pair perfectly with meat dishes (hello, pan-seared boneless ribeye) and serve as a great addition to any holiday/appetizer spread.
Let’s get into the flavors though. Garlic – everyone’s favorite, butter, rosemary, parmesan. Talk about salivating. Each time I tested this recipe, we simply could not keep our hands off; it was devoured in a flash! I could go on all freaking day about these potatoes, but you’re here for the recipe deets, so let’s get into those!
What Do Baby Red Potatoes Taste Like?
Baby red potatoes are creamy and tender. They are easy to cut into making them perfect for hasselback potatoes. They are neutral in taste, and hold up to a variety of flavor profiles.
Do the Potatoes Need to be Peeled?
There is no need to peel the baby red potatoes, as the skin does not alter the texture or tase. Simply wash and scrub the skin to remove any dirt/debris. There are a host of nutrients found in the skin of a red potato.
Can Hasselback Potatoes Be Prepped in Advance?
These potatoes can absolutely be prepped in advance, but I have a few notes if you’re going to do so. Store the prepped potatoes in a covered dish, soaking in water to prevent discoloration. By “prepped” I mean, cut into thin slices, but not yet roasted/cooked. When ready to cook, drain and dry the potatoes then continue with the next steps.
Can the Potatoes Be Reheated?
Yes, quickly pop these potatoes in your oven for air fryer for easy and crispy reheating.
What Does Hasselback Mean?
The term “hasselback” originates in Sweden, referring to potatoes made popular by Leif Elisson of the Hasselbacken Restaurant. It simply means potatoes that have been partially cut into fan-like or “accordion” slices.
What Ingredients Do I Need?
- Baby Red Potatoes
- Extra Virgin Olive Oil
- Salt
- Butter
- Grated Parmesan Cheese
- Minced Garlic
- Finely Chopped Rosemary
- Lemon Juice
- Black Pepper
How to make Hasselback Baby Red Potatoes
- Preheat oven to 400° F
- Wash the potatoes.
- Use a knife to make thin, crosswise slices into the potato, being careful not to slice all the way through. Each slice should measure about ⅛ inch or less. If you accidentally cut through the potato, my suggestion is to just keep going. It’s not the end of the world. *Note*: if you need a “guide” for cutting the potatoes, simply place a chopstick or skewer on the side to prevent yourself from cutting through the entire potato.
- Place the potatoes on a lined baking sheet
- Drizzle or spray the potatoes with oil of choice before generously salting each potato.
- Place the potatoes into the oven and bake for 40 minutes.
- Meanwhile, in a small saucepan over medium-low heat, add the butter, parmesan cheese, garlic, rosemary, lemon juice, and black pepper. Allow to cook slowly, whisking frequently, until the butter is completely melted.
- Remove the potatoes from the oven, and drizzle each one with the butter mixture, being sure to get between the slices.
- Top with extra chopped rosemary and serve with dipping sauce of choice.

- 3 teaspoons Grated Parmesan Cheese
- 1 teaspoon Minced Garlic

- 2 teaspoons Lemon Juice
